Million Dollar Cowboy Bar resurrects steakhouse
JACKSON HOLE, Wyo. — The Million Dollar Steakhouse will rise from the ashes and reopen sometime early next year, according to Bill Baxter.
Baxter owns the Million Dollar Cowboy Bar (the steakhouse is situated underneath the iconic honkytonk) and The Wort Hotel. Since purchasing the Million Dollar Cowboy Bar in 2018 Baxter has expressed a strong desire to operate the historic Million Dollar Steakhouse.
“It only makes sense for us to own and operate the steakhouse, we believe there are so many opportunities to collaborate with the iconic bar upstairs and capitalize on personnel and infrastructure already in place at Silver Dollar, Inc.,” Baxter said.
The steakhouse has enjoyed its ups and downs over the decades. Chef Paulie O’Connor (Old Yellowstone Garage) took the helm in early 2020 just as COVID was shutting things down and making like nearly impossible for restaurants. The steakhouse never really found its footing, closed in March 2021, and O’Connor moved on.
Now plans are to rebrand the eatery as a family-friendly, casual dining experience serving lunch and dinner.
“The restaurant will feel very much like being in the iconic Cowboy Bar with historic photos and Cowboy Bar memorabilia. The menu will feature classic Steakhouse fare and an authentic Western experience with a full and expanded bar,” Baxter says.
Jim Waldrop, president and general manager of Silver Dollar, Inc. added, “We look forward to the opportunity to operate the steakhouse and build on the foundation provided to us by all of the previous owner/operators as well as putting our own touches on décor and menu. While these are challenging times to open a restaurant, we are tremendously committed to this long-term vision and opportunity. These are very exciting times for us.”
No major changes are slated for the Million Dollar Cowboy Steakhouse. There will be some interior renovation work completed in the fall of 2021 with a tentative grand reopening date of late 2021 to early 2022.
